Wash, dry, salt and pepper 1 whole chicken inside and out. In 3 T. butter simmer 8 to 12 oz. of washed and sliced fresh mushrooms until tender. With slotted spoon transfer mushrooms to chicken's cavity, but do not sew up. Place chicken in roasting pan, pour the mushroom pan drippings over it, cover and bake in oven pre-heated to 375 degrees, for 1 hour. check for doneness and then bake uncovered until brown. Serve with rice.

If for ease, you wish to use chicken pieces instead of a whole chicken:

Just layer the mushrooms and chicken pieces, pouring the mushroom over the top and reduce the baking time to 35-45 minutes before checking.
